Braised ham with maple syrup and sweet gale mustard

This ham recipe is simply delicious! Both simple and effective, it showcases local products. We used Rang 4 picnic ham, Albion microbrewery's "Bitter Classique" beer, and our delicious Maple and Sweet Gale mustard .

 

Ingredients :

  • 2.5 kg of picnic ham
  • 2 onions
  • 3 cloves of garlic
  • 60 ml of Maple and Sweet Gale Mustard
  • 1 can of beer 470 ml
  • 1 cup of maple syrup
  • 2 cups of water

Preparation :

  1. Cut the onions into small cubes and sweat them in a large saucepan.
  2. Add the finely chopped garlic and continue cooking for 2 minutes.
  3. Add the mustard, beer, maple syrup and water, then mix well.
  4. Place the ham in the saucepan and bring to a boil.
  5. Cover the casserole and place in the oven at 350°F (175°C) for 3 hours.
  6. Baste the ham every hour during cooking.
  7. Once cooked, remove the ham from the pan and strain the cooking juices.
  8. Reduce the cooking juices for about 10 minutes, and the ham is ready to be served with its juices.
