Yule log with raspberry and cherry jam and mascarpone cream

Sponge cake recipe
Ingredients :
- 6 room-temperature eggs
- 1 cup of sugar
- 3/4 cup of flour
- 1/4 cup cornstarch
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 4 tablespoons of vegetable oil
Preparation :
- Preheat oven to 350°F (180°C).
- In a large bowl, beat the eggs and sugar with a mixer or stand mixer until the mixture is light and fluffy. Slowly drizzle in the oil while continuing to beat. Set aside.
- In another bowl, mix all the dry ingredients (flour, cornstarch, baking powder and salt), then pass the mixture through a sieve to remove lumps.
- Gently incorporate the dry ingredients into the egg mixture by folding gently with a spatula, without overworking the dough.
- Spread the mixture on a baking sheet lined with parchment paper (approximately 17 x 12 inches).
- Bake for 20 minutes at 350°F (180°C), or until the sponge cake is golden brown and a toothpick inserted comes out clean.
- Once the sponge cake has come out of the oven, let it cool before assembling the yule log.
Mascarpone cream recipe
Ingredients :
- 1 1/2 cups 35% whipping cream
- 1 cup of icing sugar (powdered)
- 2 cups of mascarpone cheese
- 2 teaspoons of vanilla
Preparation :
- Using a mixer, whip the cream until soft peaks form, then add the icing sugar and continue whipping until stiff peaks form. Set aside.
- In another bowl, mix the mascarpone cheese and vanilla at maximum speed until smooth.
- Gently combine the two mixtures and refrigerate until ready to assemble the yule log.
Assembling the log:
- Once the sponge cake has cooled completely, spread about half of the jar of raspberry and cherry jam (212 ml) over the entire surface. Then, spread one-third of the mascarpone mixture over the jam.
- Carefully roll up the sponge cake, being careful not to break the roll. Then place the log in the refrigerator for an hour; this will allow the shape to hold its shape.
- Once the yule log has cooled completely, spread the remaining mascarpone mousse over the entire surface. For decoration, use a piping bag to create patterns and add raspberries and cherries for a delicious finishing touch.
