Pan-fried scallops with melon, orange, and cardamom jam

Ingredients :

  • 8 large scallops
  • 2 tablespoons of white wine
  • 2 tablespoons of orange juice
  • 1 tbsp Melon, orange, cardamom jam
  • 1 tablespoon of butter
  • 1 tablespoon of olive oil
  • Salt and pepper

Preparation :

  • In a hot pan, sear the scallops over high heat for 1-2 minutes on each side, depending on their size, until golden brown, then season with salt. Keep warm.
  • Deglaze with white wine and orange juice and reduce to a syrupy consistency.
  • Strain the juice (optional), and add the butter and the Melon, Orange, Cardamom Jam . and stir.
  • Place the scallops on warm plates, coat with sauce and season with pepper.
