Pan-fried scallops with melon, orange and cardamom jam
Ingredients :
- 8 large scallops
- 2 tbsp white wine
- 2 tbsp orange juice
- 1 tbsp Melon, orange, cardamom jam
- 1 tbsp butter
- 1 tbsp olive oil
- Salt and pepper
Preparation :
- In a hot pan, brown the scallops over high heat for 1-2 minutes on each side depending on the size until golden brown, then add salt. Keep warm.
- Deglaze with the white wine and orange juice and reduce to a syrupy consistency.
- Strain the juice (optional), and add the butter and the Melon, orange, cardamom jam and stir.
- Place the scallops on warm plates, cover with sauce and season with pepper.
