Pan-fried scallops with melon, orange, and cardamom jam
Ingredients :
- 8 large scallops
- 2 tablespoons of white wine
- 2 tablespoons of orange juice
- 1 tbsp Melon, orange, cardamom jam
- 1 tablespoon of butter
- 1 tablespoon of olive oil
- Salt and pepper
Preparation :
- In a hot pan, sear the scallops over high heat for 1-2 minutes on each side, depending on their size, until golden brown, then season with salt. Keep warm.
- Deglaze with white wine and orange juice and reduce to a syrupy consistency.
- Strain the juice (optional), and add the butter and the Melon, Orange, Cardamom Jam . and stir.
- Place the scallops on warm plates, coat with sauce and season with pepper.
